ISTRIAN PROSCIUTTO (P.D.O.) IS SPECIAL – JUST LIKE THE REGION IT COMES FROM

Istrian prosciutto is made from specially selected cuts of meat, obtained from pigs fed with local food such as boiled potatoes, pumpkin, turnips and clover. The elegant, elongated shape of Istrian prosciutto comes from the specific way the leg is processed, and all the fat and skin are removed, and the pelvic bone is left on. Sea salt, black pepper, fresh garlic, bay leaf and rosemary are rubbed into the fresh meat by hand. Istrian prosciutto is a product without artificial preservatives, air-dried for at least 12 months. It is a delicate product which combines the rich flavour of red meat and sweetness of the fat. During drying, the entire leg is covered with noble mould, which gives it a characteristic taste and aroma. The entire process of prosciutto production is strictly controlled by an authorized institution, in accordance with the manufacturer’s specification, which was created based on a long tradition, known to Istrians since the 16 th century.

PROSCIUTTO ADRIATIC

Prosciutto production is a long-standing tradition of the Hreljak family. Faithfully
following the recipe of their ancestors, the Hreljak family has been combining tradition and modern technology for more than 25 years. Prosciutto that bears the name of the Adriatic Sea is produced from top quality raw material; pigs bred specifically for the production of prosciutto. Natural spices and a long, slow method of drying and ripening are used. After minimum 16 months of drying, the Pisinium manufactory produces prosciutto that is incredibly aromatic, juicy and… special.

Special because:
– Produced without smoke
– Seasoned with sea salt, garlic, and bay leaf
– A unique recipe incomparable to another prosciutto produced in the EU

PPROSCIUTTO 

 ‘’ROSE’’

‘’Rose’’ prosciutto is special because, in addition to using only top-quality raw materials, it is produced with aromatic herbs, garlic, sea salt and black pepper, which is a real rarity in the world. The product is dried in air chambers, when the weather is suitable, specially protected windows, are opened to allow fresh dry air to dry each piece of meat. During drying, the product is covered with noble mold, giving the final note to the story of the uniqueness of the Istrian specialty.

The Istrian method of production – sea salt, black pepper, garlic and laurel are the traditional ingredients of prosciutto ‘’ Rose’’.

Recipe

PISINIUM SALAD
(FOR FOUR PERSONS)

INGREDIENTS:
10 dkg prosciutto Rose, 50 dkg pasta, 10 dkg fresh cheese, 15 dkg cherry tomatoes, basil, parsley, garlic – one clove, salt, pepper

PREPARATION:
Simple, tasty and effective. How to cheer up dear friends or guests? Cut the "prosciutto Rose" into cubes, cook the pasta, cool it, add fresh cheese and tomatoes cut into quarters and mix everything gently. Place the salad in the refrigerator for about thirty minutes to let the flavours mix, then serve chilled with the addition of fresh basil and parsley.
